多謝大家對『惠康「屋企萬歲」家常新「煮」意』嘅支持。過去一個星期我地正謹慎咁評估六個每週最佳食譜,以選出最實至名歸嘅一個參賽作品為終極冠軍。我地今次特別邀請咗am730飲食專欄作家Candy Tsui幫我地為六個每週最佳食譜下廚及評分,再加上惠康代表兼營養師Elman 幫我地以專業嘅角度評估下碟餸嘅營養價值及評分。詳細食譜可到以下相簿參考。Thank you for the "Wellcome" long live the home "home of the new" cooking "meaning" Kai support. 第一個星期嘅「每週最佳食譜」就係Ovan Choi嘅香煎脆皮腐皮卷啦!

今次特別邀請咗am730飲食專欄作家Candy Tsui幫我地評分:「依碟絕對係新年時用嚟做宴客親朋嘅好菜式。金黃香脆嘅腐皮配上爽口餡料,趁熱食就最好味。如果可以嘅話,整定多啲都唔怕,用濕布蓋住放入雪櫃,下次煎一陣就可以食啦 !」

Candy仲建議可以放少量嘅生粉水搽係腐皮卷嘅收口處,咁樣煎嘅時候收口處先會向下,腐皮卷就唔容易散開。 同埋未包餡嘅腐皮應該用濕布蓋住,以免被吹乾,令到包餡果時容易整爛。惠康代表兼營養師Elman腐皮不但提供蛋白質,更含有卵磷脂,對身體整體健康和機能非常有益。

第一個星期嘅「每週最佳食譜」就係Ovan Choi嘅香煎脆皮腐皮卷啦!

材料:豬肉,香菇,雲耳,蘑菇香干,芹菜,榨菜,腐皮
調味料: 雞粉,鷹粟粉及鮮露,鹽,...醬油,少許干辣椒籽,料酒

做法好簡單,只係得三個step咋!
1.材料切成絲,加入調味料醃1小時就可,雞粉同埋鮮露嘅味道可以好快滲入材料中而且能帶出鮮味.
2. 將醃好嘅餡加啲鷹粟粉(可令口感軟滑)再包入腐皮入邊.
3 油適量開中火燒到8分熱,將包好的腐皮卷煎到金黄色,上碟前切段就食得.

第二個星期嘅「每週最佳食譜」就係Vivi Chan嘅三文魚豆腐脆餅啦!

香脆可口又易整,做party野食最啱啦!am730飲食專欄作家Candy Tsui試煮完就覺得好好味,又啱大人又啱小朋友食!三文魚含豐富奧米加三,配合蛋白質豐富的豆腐,營養非常豐富!如果驚腥,仲可以用薑蓉同紅辣椒碎辟左浸魚腥味。 Candy建議比小朋友食可以用挪威三文魚柳,因為肉厚無骨,小朋友食得零舍開心!有啲人會驚熱氣,所以Candy話可加入馬蹄粒,咁樣除咗增加三文魚豆腐脆餅嘅口感之外,令脆餅更加清甜,仲會減少熱氣感覺!

更加請嚟惠康代表兼營養師Elman,幫我地以專業嘅角度評估下碟餸嘅營養價值: 「三文魚含豐富奧米加三,加強心臟機能,亦令頭腦更靈活。」

第二個星期嘅「每週最佳食譜」就係Vivi Chan嘅三文魚豆腐脆餅啦!

材料:三文魚、豆腐、麵粉、1隻雞蛋、1片薑、2粒蒜、芝麻(少許)、芹菜、洋蔥半個、青椒...、紅辣椒(適量)
調味料:白砂糖、鹽、醬油、香油、蠔油、胡椒、黃酒(各約1湯匙)

香脆可口又易整,做party野食最啱啦!
1. 首先將麵粉同雞蛋打勻,再將薑、蒜、洋蔥、芹菜、紅辣椒、青椒各材料切碎,最後將三文魚切成小塊
2. 之後將豆腐放係碗裡壓碎,再混合所有材料同調味料,攪拌均勻
3. 最後用適量油,係煎煮時用羹輕輕壓,將兩面煎至金黃色即成

第三個星期嘅「每週最佳食譜」就係Elaine Wong嘅蔬菜煎餅啦!

做法唔複雜,am730飲食專欄作家Candy Tsui煮完大讚:「色彩繽紛嘅蔬菜,單憑視覺上嘅刺激,已令人食慾大增!如果想令蔬菜煎餅更加爽口,仲可以加入銀芽添!若食材中加入洋蔥和蒜蓉,與蔬菜配料略炒至有香味才加入蛋漿,除了辟除三色豆的雪味外,更可令蔬菜煎餅的風味更佳! 」

惠康代表兼營養師Elman指出,雞蛋含豐富嘅鋅,有助人體組織生長同更新,對小朋友身體尤其好。用料更包括豆,椰菜同蘑菇,更有豐富膳食纖維。」

第三個星期嘅「每週最佳食譜」就係Elaine Wong嘅蔬菜煎餅啦!

材料:三色豆 20克, 鮮香菇 10克, 椰菜 10克, 雞蛋 1顆, 調 味 料, 麵...粉 1/2大匙,鹽 1/8小匙

做法唔複雜,淨係得三個step姐!
1.雞蛋打勻;鮮香菇、椰菜、三色豆快速洗淨瀝乾水分備用
2.將所有材料同調味料放入大碗入邊拌勻備用
3.熱鍋倒入少量油燒熱,倒入作法2材料以小火煎約8分鐘至熟同埋呈少少金黃色即可
